Difficulty level and why:  There are a lot of steps for these cookies.  It is not a cookie that you do at the spur of the moment.  You are basically making mini pies.  The steps themselves are not difficult, but time consuming. Dad would have just preferred to make one pie not several

What the family thought: It needed ice cream.  This is not the recipe you make with kids.  We doubled the recipe and got 32 cookies.  The kids like these over normal pie which is a big win in the family.

On a side note.  This was the first time using a pastry mat and it was amazing.  That was a good purchase.  We also have a cheater rolling pin that will roll the dough to a thickness
